Rice Pudding

Here is the recipe for my Rice Pudding. Enjoy.

  • 1 1/2 Cup soaked Basmati Rice (soaked for 4 hours rinsed and strained)
  • 3 Cups Water
  • 1/2 Cups Flame Raisins
  • 5 Cardamom pods (broken open)
  • 2 Cinnamon Sticks
  • 3 Slices Fresh Ginger
  • 1 teaspoon Coconut Oil
  • Cook Until Rice is done (about 15 min if soaked and 20-25 min if not soaked)
  • Add 2 Cans of Organic  Coconut Milk (1 light one regular) to consistency you prefer (you can also use milk if you prefer.
  • 3 Tablespoons Coconut Sugar or to your sweet preference
  • Allow to cook on low stirring regularly until rice is nice and soft.
  • When you want to reheat – add more milk or water to make a little soupy consistency.
